Maggie's All-in-one breakfast
Ingredients:
Andouille sausage (or whatever kind you like) cut into 1/2" chunks
4 eggs
1/2 cup half-n-half or milk
2/3 cup shredded sharp cheddar
2 slices white bread, torn up
1/2 cup chiffonaded collards or spinach (roll the clean leaves up and very thinly slice so you end up with ribbons)
1/2 T Butter/margarine

Melt butter in 9" nonstick skillet, add torn bread, distributing evenly. Sprinkle cheddar, sausage & greens over the bread.
Beat eggs, add milk & any seasonings you favor then pour over bread/sausage/cheese/greens.
Cook, covered, on low/medium for 15m or 'til eggs are set. If you're in a hurry, you can flip the concotion to finish the top quickly, but it'll leave a messy, cheesy skillet to wash.

Hey, I'll bet that is good--sort of like a strata in a frying pan! Might have to try it with leeks or dandilion greens. Thanks!
