Orzo Noodle Soup

muslim sister's picture

A good soup, especially for the cold times.

1 tomato; diced                1 onion; diced

3 oz chickpeas ,soaked overnight

1 potato; cubed .5"           5 oz orzo

2 cloves garlic; crushed      2 tbsp celery leaves; chopped

1 tbsp tomato paste          3 tbsp olive oil

1/2 tsp of each: pepper, paprika, salt

1 cinnamon stick               water

1. Add all of the above ingredients to a large pot, except for water & orzo, and let saute for a few minutes. Add water to barely cover, mix well, and let cook until the beans are tender.

2.When the beans are tender add the orzo and let cook for another 8-10 minutes, until the orzo is tender.

((you can also add meat chunks to this soup, put them in the pot with the olive oil first and let them brown on all sides, then continue with the rest of the recipe, it is good either way.))Cool
