A snow day here in Cincinnati, so I thought I'd share Lovina's recipe for homemade chicken noodle soup!
CHICKEN NOODLE SOUP
3 lb. chicken
2 qts. water
2 tsp. salt
1 1/2 c. chicken stock
2 c. celery, chopped
2 c. carrots, chopped
1 tart apple, chopped
1 c. onions, chopped
Dash pepper
4 c. egg noodles
Place chicken in kettle with 2 quarts water. Cover and cook over medium heat until tender (about 2 1/2 hours). Remove chicken from kettle and strain broth. Debone chicken and
return to kettle with strained broth. Add chicken stock, celery, carrots, apple, onions, and pepper and cook until vegetables are tender. Add noodles and cook 8-10 minutes.

my grandmothers used larger slices of apples and removed them thinking they were removing fat from whatever they ertr cooking--any connection here???

I have heard of adding and removing a potato to remove fat and/or salt,but never an apple. It could be,I suppose, but since she specified "tart", I still think it would be for flavoring purposes. Maybe Kevin can find out for sure(from Lovina,of course!)

Thanks- they could have been doing double duty - flavor and fat removal (or trying to stretch with what was on hand and calling it the first thing that came to mind

Well the chicken is in the water simmering away, can't wait to see how everything turns out. First time trying to make home made soup.

Interesting! I have not ever seen a recipe or heard of adding apple...I am definately gonna try it. I think it would add just a touch of sweetness..we will see!

this is the same way that my mother made her home made chicken noodle soup...it is sooo good! this really brings her back to me in my heart..she passed in 2001.
